As you may know my New Year’s resolution was to learn a few recipes should anyone be brave enough to come over for dinner! Being the competitive person i am, i couldn’t let myself down, so believe it or not i’ve actually spent some time in the kitchen! Shocking i know! The smoke alarm has never had so much activity, and as for the oven, well I’m surprised it still even turns on and hasn’t completely given up on me! My meal of choice was of course the very easy chilli prawn stir fry, but hey you have to start somewhere. I adapted a few things, like the choice of noodles but other than that i pretty much stuck to it! I’ve taken some photos as evidence, because i know otherwise my family and friends won’t believe i’ve actually done it. See below for the receipt i followed, very quick, very easy and reasonably healthy…enjoy!
- 150g rice noodles, uncooked
- 1tsp of sesame oil
- 2tsp of vegetable oil
- 2 chillies, finely chopped
- 2 pieces of fresh ginger, peeled and grated
- 4 cloves of garlic, crushed
- 1 red pepper, de-seeded and chopped
- 1 large head of broccoli, cut into small florets
- 4 spring onions, sliced
- 200g peeled raw prawns
- 2 pak choi (bok choy), sliced
- 4tsp of soy sauce
- 2tbsp of sweet chilli sauce
- 2tbsp of sherry or rice wine vinegar
Cook the noodles according to the package directions, when tender, drain and toss with the sesame oil.
Heat the vegetable oil in a nonstick frying pan or wok. Cook the chillies, ginger and garlic over a high heat for 30 seconds, then add the red pepper, broccoli florets, spring onions and prawns.
Cook for 3-4 minutes until the prawns have turned pink. Add the pak choi, noodles, soy sauce, chilli sauce and sherry to the pan.
Continue cooking until the mixture is heated through, and serve immediately.
It’s not often that I get the luxury of a day off and even less often that I can time it with the wonderful Una Foden, but yesterday was a real treat as we managed to make it work. We had the girliest day of getting pampered and catching up over coffees! From manicures, pedicures, eyebrow shaping, massages, it was all happening! We chose Dermaspa as it’s the home of HD brows which Una and I both swear by.
The spa’s a converted barn along the M1 which suits Una and I great as its half way between where we both live. Fingers crossed we can book in another visit soon!
